Vanessa has an extensive background in administration, project management and program evaluation, as well as student/team development and environmental education. She also serves as Executive Director for the Network of Oregon Watershed Councils. She holds a master’s degree in Higher Education Administration from Syracuse University. In her free time, she likes to read and play outside with her three children.
Leanne Witek has Bachelor of Science degrees in Biology from the University of North Texas and Dietetics from Kansas State University. She completed her Dietetic Internship through the University of Houston. In addition to working at Valeria Mallett Nutrition, she also works as a clinical dietitian for a local hospital system, providing medical nutrition therapy to patients with a variety of health conditions. She is a member of the diabetes practice group of the Academy of Nutrition and Dietetics and is in the process of becoming a certified diabetes educator.
Leanne absolutely loves being a dietitian. She’s had the pleasure of working with thousands of different patients, ranging from newly diagnosed to those dealing with life-long health issues. She understands that each of us has a unique story and approach to managing our health, and wants to work side by side to set and maintain goals. Leanne is a compassionate listener who strives to create a positive and encouraging environment where patients feel safe expressing their goals, motivations and barriers. As different as we all are, she believes that each of us has the ability to make positive health changes, big or small.
Leanne loves being outdoors. In her free time, you can find her hiking, camping or biking with her husband and son. Her creative outlets are sewing and trying to make fancy food on a tight budget. Her personal nutrition goals include eating more plant-based meals and devoting more time to menu planning.
Cleo Moursi, MPH
Administrative Assistant, Registration Eligible for Dietitian
Cleo holds a Bachelor of Science in Biological Anthropology (2018) and a Master of Public Health (2020 degree), both from the University of Michigan. During her education, Cleo gained experience in nutrition education and resource development. Cleo completed her Dietetic Internship at the Cleveland Clinic (2021), where she received Medical Nutrition Therapy and counseling training. She is in the process of obtaining her credentials here in Oregon and looks forward to working with individuals at Valeria Mallett Nutrition to achieve whatever health goals they aspire to reach.
Cleo has dreamed of becoming a Registered Dietitian since her Sophomore year of high school. She is drawn to nutrition because it is a powerful tool that anyone can use to reclaim their health; plus, it can be fun! Cleo loves to focus on adding variety, color and trying new foods so that eating healthfully becomes an exciting adventure.
Her personal nutrition goals include finding easy, tasty ways to eat vegetables at every meal and learning new things about the field of dietetics.
